            <description><![CDATA[I'd like to call Friends' attention to my blog, Quaker Historical Lexicon, at http://quakerlexicon.wordpress.com/

It is mainly concerned with tracing the origins of distinctively Quaker vocabulary, proverbs, etc., and with changes in the meanings of Quaker terms over time.

It has room for comments, which are very welcome.

            <title>Mushroom crepes recipe</title>

''Crepes:''

1 cup flour
1 cup milk
1 egg
1/4 cup sugar
3 tablespoons or less of oil

''Filling/Sauce:''

3 tablespoons oil, plus a little more
1 medium onion, chopped
4 large cloves garlic, minced
8 ounces mushrooms, sliced
1 small handful fresh parsley, chopped
1 can cream of mushroom soup
1/2 cup red wine
1 tablespoon worcestershire sauce
1 tablespoon paprika
1 pinch cayenne pepper
black pepper to taste
2 tablespoons parmesan, romano or asiago cheese


Enter the kitchen in perfect love and simplicity of heart.  Still thy mind, turn inward, and wait humbly upon the Lord, dying to earthly concerns.  If no obstacle present itself, mix the flour, milk, egg, sugar and two tablespoons of oil in a large bowl, beating it into a smooth batter.

Now if moved thereunto, heat a tablespoon or less of oil in a small frying pan over medium heat.  When it is nice and hot, pour in about three tablespoons of batter.  Tilt the pan to spread the batter thinly over the bottom of the pan.  Fry until golden brown on the bottom, about one minute; then turn and fry on the other side till done, about another minute.  Remove from the pan, and repeat as led with another three tablespoons of batter, continuing like fashion until all thy batter is gone.  Makes about six crepes.

Do not neglect to preheat the oven to 350 degrees.  Meanwhile, in a large skillet or saucepan, heat about three tablespoons of oil.  If so led, add the onions and garlic, and fry on medium for about three minutes, stirring frequently.  Add the mushrooms, and continue to fry, stirring frequently, till their color deepens: about five more minutes.  If no stop appear in thy mind, add the cream of mushroom soup and the wine, stirring until smooth.  Add the parsley and stir.  Next add the worcestershire sauce and the paprika, stirring again.  Add the black pepper and cayenne, taking care not to outrun thy guide; stir again.

Now leave off thy stirring, remove the pan from the heat, and take a baking dish, about 8 by 8 inches.  Wipe the inside with a thin layer of oil.  If thy mind is easy, place a crepe in the pan, spoon about three tablespoons of the mushroom mixture onto it, then roll it up and push it to one end of the dish.  Repeat with a new crepe, placing it next to the first one, and continue in like manner with all the crepes.  Pour the remaining mushroom mixture over the rolled-up crepes, sprinkle with the cheese, and place in the hot oven.  Still thy appetites and wait in divine presence until done, about 25 minutes.  Now, if clear in thy mind, remove from the oven and eat.  Makes two or three servings.
